From professional kitchens to entrepreneurship

Luu Meng’s career developed through professional cooking before expanding into hospitality investment. His mother and grandmother influenced his interest in food, and he trained at a hotel school in Thailand. Work across the region exposed him to different kitchen practices before he built his reputation in Cambodia’s hotel industry.

A 2013 profile by culinary writer Darren Gall places him at Hotel Cambodiana in 1993 and records his promotion to sous-chef within two years. There he met Arnaud Darc, who worked in finance and purchasing. Their complementary experience later supported a partnership combining culinary development with restaurant management.

Malis and the research behind a restaurant

Meng and Darc established Malis in the mid-2000s to give Cambodian food a prominent place in Phnom Penh’s restaurant market. Meng travelled around the country for six months, learning from cooks and collecting regional recipes. That research became the basis for the restaurant’s approach to familiar dishes and local ingredients.

He describes this approach as Living Cambodian Cuisine: traditions adapted through contemporary equipment, techniques and diners’ preferences. In a published interview, he stressed ingredient origin, freshness and seasonality. He also distinguished cooking talent from operating a restaurant, advising aspiring owners to consider staffing, management and whether they could assess their businesses objectively.

Almond businesses and the Thalias consolidation

Alongside Malis, Meng developed the Almond Group with other investors. Its hotels and restaurants broadened his commercial activity beyond a single cuisine or venue. Almond Hotel and Yi Sang’s Cantonese restaurants formed part of that portfolio, while the partnership with Darc continued through their separate hospitality groups over many years.

On 22 June 2023, the groups signed legal documents bringing Almond assets into Thalias. Reporting identified Almond names including Yi Sang, Sevensea and Uy Kuyteav alongside Thalias brands such as Malis, Topaz and Khéma. In an August interview, Darc described the acquisition as the culmination of a longstanding partnership accelerated after the pandemic.

Training people and representing tourism

Meng’s work also extends to hospitality education. In June 2026, the Professional Institute of Excellence identified him as its president during an education-minister visit. The institute described practical culinary and food-and-beverage training developed with employers, connecting classroom instruction with the operational skills that hotels and restaurants need from new recruits.

In August 2026, the Cambodia Tourism Federation identified him as private-sector co-chair of Tourism Working Group B, representing the Cambodia Chamber of Commerce. The role involved reviewing industry concerns with the tourism ministry. His later career therefore connects individual restaurant businesses with workforce development and collective representation of the wider visitor economy.
