Mang Inasal’s Iloilo beginning
Edgar “Injap” Sia II was born in Iloilo City in 1977. His national business profile emerged from Mang Inasal, whose first restaurant opened at Robinsons Place Iloilo on 12 December 2003. The brand’s own history identifies Sia as its founder and connects its grilled-chicken offering with Iloilo’s inasal tradition.
The restaurant combined a familiar regional food with a format that could be repeated across locations. Franchising began in 2005, extending the business beyond its original store. Its growth is a provincial entrepreneurship story, but also a story about distribution: a successful dish became a national brand through outlets, franchise relationships and operating systems.
Jollibee acquired Mang Inasal in stages
Jollibee Foods Corporation’s 2010 annual report records the acquisition of a 70 per cent interest in Mang Inasal. That transaction transferred control, rather than immediately giving the buyer every share. Sia’s investment group initially retained a minority interest.
Jollibee’s disclosure index records the acquisition of the remaining 30 per cent in April 2016. Only the later transaction completed the group’s ownership of Mang Inasal. Separating the two stages avoids describing the 2010 deal as an immediate total exit. It also clarifies the relationship between Sia’s restaurant success and his subsequent ventures: he became an entrepreneur associated with a new investment platform, not the continuing independent owner of the restaurant chain.
DoubleDragon and the second venture
Sia partnered with Jollibee founder Tony Tan Caktiong and their families in 2012 to develop DoubleDragon, which listed on the Philippine Stock Exchange in 2014. The company’s board identifies Sia as chairman and chief executive and Tan Caktiong as co-chairman. This is a separate corporate partnership, not a change of name for Mang Inasal.
DoubleDragon’s property businesses include community malls, offices, industrial warehouses and hospitality. They depend on construction, financing, tenants and guests, rather than the restaurant franchise model alone. The shift gave Sia a second business platform with a different capital structure and income cycle. Public listing also meant that the company reported to investors beyond its founding families.
Hotel101’s hospitality model
Hotel101 develops standardised hotel accommodation while allowing third-party buyers to own individual units within managed properties. DoubleDragon’s September 2025 offer supplement describes the unit-owner model and the booking platform intended to connect properties internationally. The hotel operator’s business and a unit buyer’s ownership are different parts of that structure.
The same document describes developments in Niseko, Madrid and Los Angeles as part of the overseas strategy. These were dated project and land-development disclosures, not evidence that every hotel had opened or reached profitability. The hospitality platform extends Sia’s interest in repeatable consumer formats while introducing construction, occupancy and cross-border execution risks.

Nasdaq listing and the limits of a founder narrative
Hotel101 began trading on Nasdaq under the ticker HBNB on 1 July 2025, following a business combination involving JVSPAC. The September offer supplement records that milestone. It was the listing of the hospitality subsidiary, not the transfer of DoubleDragon’s own Philippine listing to the United States.
Sia’s career now connects a regional restaurant brand, a staged corporate sale, Philippine property investment and an international hospitality vehicle. Each stage has a different ownership structure. The listing documents and company board records establish transactions and responsibilities; they do not turn corporate valuations, hotel-development targets or portfolio assets into a verified estimate of his personal wealth.
